- 1 cup pineapple chunks
- 1 bell pepper, chopped
- 1 small onion, chopped
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a skillet, heat olive oil over medium heat.
- Add cubed chicken to the skillet and cook until no longer pink, about 5-7 minutes.
- Add chopped onion and bell pepper; cook until softened, about 3-4 minutes.
- Stir in pineapple chunks, soy sauce, and honey. Season with salt and pepper and cook for an additional 5 minutes.
- Serve the pineapple chicken over cooked rice.
Notes
Use fresh pineapple for better flavor, and feel free to add crushed red pepper flakes for heat.
