Ingredients

  • 1 cup crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet mixture, alternating with the crushed pineapple. Fold in walnuts if using.
  5. Pour the batter into the prepared cake pan, smoothing the top.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
