- 2 tablespoons kosher salt

- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons olive oil
- 1 cup beef broth
Instructions
- Preheat the oven to 450°F (230°C).
- In a small bowl, mix together the minced garlic, kosher salt, black pepper, rosemary, thyme, and olive oil, creating a flavorful paste.
- Rub the paste all over the prime rib roast, ensuring to coat it thoroughly.
- Place the roast in a roasting pan with the bone side down. Roast at 450°F (230°C) for 20 minutes.
- Lower the oven temperature to 325°F (165°C) and continue cooking for 1.5 to 2 hours, until the internal temperature reaches 130°F (54°C) for medium-rare.
- Transfer the roast to a plate and let it rest for 20-30 minutes before carving.
- To make the gravy, place the roasting pan on the stove over medium heat, add the beef broth, and scrape up any browned bits. Simmer for a few minutes and serve with the sliced prime rib.
