- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 1 cup chopped pecans
- 1 cup corn syrup
- 1 cup brown sugar
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each.
- Fold in chopped pecans gently.
- Pour cream cheese mixture over the crust.
- Mix corn syrup and brown sugar until smooth, then pour over the cream cheese layer.
- Bake for 55-60 minutes, or until the center is set with a slight jiggle.
- Cool at room temperature, then refrigerate for at least 4 hours.
- Remove from the springform pan and slice to serve.
Notes
Serve chilled, optionally garnished with whipped cream, caramel sauce, or toasted pecans.
