Ingredients

  • 1 block of firm tofu
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup quinoa or rice, cooked
  • 1 cup mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Press the tofu for 15-20 minutes to remove excess water, then cut it into cubes.
  2. In a bowl, mix the peanut butter, soy sauce, maple syrup, rice vinegar, garlic, and ginger to create the sauce.
  3. Heat a pan over medium heat and add the cubed tofu. Cook until golden brown on all sides.
  4. Add the mixed vegetables to the pan and stir-fry for 5-7 minutes until tender. Pour the peanut sauce over the tofu and vegetables, stirring to coat everything evenly. Serve over the cooked quinoa or rice, and garnish with chopped green onions and sesame seeds.
