Description

A delightful and nutritious meal balancing protein-rich chicken and quinoa with fresh vegetables and creamy peanut sauce.


Ingredients

Scale
  • 2 cups cooked quinoa
  • 1 lb chicken breast, cooked and sliced
  • 1 cup broccoli, steamed
  • 1 cup red bell pepper, sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup cucumber, sliced
  • 1/4 cup green onions, chopped
  • 1/2 cup peanut sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Combine the cooked quinoa, sliced chicken, steamed broccoli, red bell pepper, carrots, and cucumber in a large bowl.
  2. Drizzle with peanut sauce and sesame oil over the mixture.
  3. Toss everything together until well coated with the sauce.
  4. Season with salt and pepper to taste.
  5. Top with chopped green onions before serving.
  6. Serve chilled or at room temperature.

Notes
