- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup chicken broth
- 1 cup cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh herbs (optional, for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Once the oil shimmers, add the cooked chicken and frozen mixed vegetables. Sauté for about 5 minutes, ensuring the vegetables are warmed through.
- Next, stir in the chicken broth and cream of chicken soup. Mix well and bring to a gentle simmer.
- Add the gnocchi, garlic powder, onion powder, salt, and pepper. Stir and let it cook for about 5-7 minutes until the gnocchi is tender.
- Once done, remove from heat and serve hot, garnished with fresh herbs if desired.
Notes
Use fully cooked chicken to save time. Rotisserie chicken works wonderfully. For a richer flavor, consider adding Italian herbs or a splash of white wine.
