Ingredients

  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Once the oil shimmers, add the cooked chicken and frozen mixed vegetables. Sauté for about 5 minutes, ensuring the vegetables are warmed through.
  2. Next, stir in the chicken broth and cream of chicken soup. Mix well and bring to a gentle simmer.
  3. Add the gnocchi, garlic powder, onion powder, salt, and pepper. Stir and let it cook for about 5-7 minutes until the gnocchi is tender.

Notes

Use fully cooked chicken to save time. Rotisserie chicken works wonderfully. For a richer flavor, consider adding Italian herbs or a splash of white wine.
