- 2 cups chicken broth
- 2 chicken sausages, sliced
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, garlic, and bell pepper; sauté until soft, about 5 minutes.
- Add the sliced chicken sausage to the pot and cook until browned, stirring occasionally, about 5 to 7 minutes.
- Stir in the farro, diced tomatoes, and chicken broth. Bring the mixture to a boil, then reduce heat, cover, and simmer for about 30 minutes or until the farro is tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh basil for a vibrant pop of color and flavor.
Notes
Make sure to rinse the farro under cold water before cooking to remove any debris. Substitute with turkey or vegetarian sausage if desired, and add herbs or spices for more flavor.
