- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 1 cup heavy cream
- 1 cup chicken broth
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1/4 cup parsley, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the garlic and sauté until fragrant, about 1-2 minutes.
- Add the shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes.
- Stir in the orzo, chicken broth, heavy cream, lemon zest, and lemon juice, mixing well.
- Bring the mixture to a simmer and cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
- Stir in the chopped spinach and parsley, seasoning with salt and pepper to taste. Let it cook for an additional minute for the spinach to wilt.
- Serve warm, garnished with extra parsley and lemon slices if desired.
Notes
Best served immediately while warm. Pairs well with a crisp side salad or crusty bread.
