Ingredients

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the garlic and sauté until fragrant, about 1-2 minutes.
  2. Add the shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes.
  3. Stir in the orzo, chicken broth, heavy cream, lemon zest, and lemon juice, mixing well.
  4. Bring the mixture to a simmer and cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
  5. Stir in the chopped spinach and parsley, seasoning with salt and pepper to taste. Let it cook for an additional minute for the spinach to wilt.
  6. Serve warm, garnished with extra parsley and lemon slices if desired.
