- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 pound andouille sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 cups spinach
- Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned.
- Add the chopped onion, minced garlic, and bell pepper. Cook until the vegetables are softened.
- Stir in the chicken broth, heavy cream, Cajun seasoning, and penne pasta. Bring the mixture to a boil.
- Once boiling, reduce the heat, cover, and simmer for about 15 minutes, or until the pasta is cooked al dente.
- Stir in the fresh spinach, cooking until wilted.
- Season with salt and pepper to taste. Serve warm, topped with freshly grated Parmesan cheese.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish is not recommended for freezing.
