Description

Delicious and nutritious muffins packed with oats, protein, and natural sweetness from bananas and honey, perfect for a quick breakfast or snack.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup cottage cheese or Greek yogurt
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 cup protein powder
  • 2 bananas, mashed
  • 1/4 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: chocolate chips, nuts, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine the rolled oats, protein powder, baking powder, cinnamon, and salt in a mixing bowl.
  3. Mix together the cottage cheese, mashed bananas, milk, honey, peanut butter, and vanilla extract in another bowl.
  4. Combine the wet and dry ingredients until just mixed, folding in optional add-ins if desired.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick comes out clean from the center.
  7. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes

Experiment with different flavors of protein powder and use very ripe bananas for better sweetness and blending.
