Delightful no-bake energy balls combining sweet apricots, oats, and nut butter for a nutritious snack.


Ingredients

  • 1 cup dried apricots
  • 1/2 cup oats
  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein powder
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup chopped nuts (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. In a food processor, combine the dried apricots, oats, nut butter, honey, protein powder, and vanilla extract.
  2. Blend the mixture until it becomes sticky and well combined. You may need to scrape down the sides of the bowl to ensure everything is incorporated.
  3. If you choose to use them, add the shredded coconut and chopped nuts to the mixture, and pulse a few times until everything is combined.
  4. Roll the mixture into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up. Once set, store the energy balls in an airtight container in the fridge.
