- 1 whole chicken
- 4 carrots, chopped
- 3 celery stalks, chopped
- 1 onion, quartered
- 2 cloves garlic, minced
- 1 teaspoon peppercorns
- 2 bay leaves
- Salt to taste

Instructions
- Place the whole chicken, carrots, celery, onion, garlic, peppercorns, bay leaves, and a generous amount of salt in a large pot.
- Cover the ingredients with water, making sure everything is submerged, and bring to a boil over high heat.
- Once boiling, reduce the heat to low and let it simmer for about 90 to 120 minutes, skimming off any foam during this time.
- After the chicken is fully cooked, remove it from the pot and set aside to cool. Strain the broth through a fine-mesh sieve to remove the vegetables and herbs. Shred the chicken meat if desired, return to the broth, and adjust the seasoning with salt before serving hot.
Notes
For a richer flavor, roast the chicken and vegetables before adding them to the pot. You can also customize the flavor with different herbs and spices.
