Description

A nutritious and satisfying bowl featuring miso-infused salmon, nutty farro, and vibrant sautéed vegetables, perfect for a quick weeknight dinner.


Ingredients

Scale
  • 2 salmon fillets
  • 2 tablespoons miso paste
  • 1 cup farro
  • 2 cups vegetable broth
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together 2 tablespoons of miso paste with 1 tablespoon of soy sauce and 1 tablespoon of olive oil until well combined.
  3. Brush the miso mixture generously over the salmon fillets. Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until cooked through.
  4. Cook 1 cup of farro in 2 cups of vegetable broth according to package instructions.
  5. In a pan over medium heat, sauté 1 cup of broccoli florets and 1 sliced carrot in olive oil until tender, around 5-7 minutes.
  6. Spoon the cooked farro into bowls and top with the baked salmon, sautéed vegetables, and garnish with chopped green onions and sesame seeds.

Notes

For added flavor, drizzle with soy sauce or sesame oil before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
