Description

Delightful cookies that combine rich chocolate and refreshing mint for a perfect balance of flavors.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips
  • 1/2 teaspoon peppermint extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract and peppermint extract if using.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the mint chocolate chips.
  4. Drop by tablespoonfuls onto ungreased cookie sheets. Bake for 9 to 11 minutes, or until the edges are slightly golden.
  5. Allow to cool on the cookie sheet for a few minutes before transferring to wire racks to cool completely.
