Description

A bright and colorful salad featuring fresh vegetables and a sweet, tangy honey dressing, perfect as a side dish or light meal.


Ingredients

  • 3 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (any color)
  • 1/2 cup red onion, diced
  • 1 cup corn (canned or frozen, thawed)
  • 1 cup black beans, rinsed and drained
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, diced bell peppers, diced red onion, corn, black beans, and chopped cilantro.
  2. In a small bowl, whisk together the honey, lime juice, olive oil, salt, and pepper to create the dressing.
  3. Drizzle the dressing over the salad mixture and toss gently to combine. Add the diced avocado on top.
  4. Serve immediately, enjoying the salad chilled or at room temperature.

Notes

Best served fresh, but can be stored in an airtight container for up to 24 hours. Add avocado just before serving to prevent browning.
