Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/2 cup kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, bring the water to a boil. Add the quinoa, cover the pot, and reduce to a simmer for about 15 minutes or until the water is absorbed.
  2. While the quinoa cooks, preheat your grill or oven to 400°F (200°C). Brush the salmon fillets with olive oil and season them with garlic powder, salt, and pepper.
  3. Cook the salmon for about 5-7 minutes per side, or until it flakes easily with a fork.
  4. In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, diced red onion, and kalamata olives. Flake the cooked salmon over the quinoa mixture. Sprinkle with feta cheese and parsley for a fresh garnish. Serve with lemon wedges on the side.

Notes

Rinse quinoa thoroughly to remove its bitter coating. For extra flavor, consider marinating the salmon in lemon juice and herbs before cooking.
