Description

Flavorful and nutritious Mediterranean Ground Turkey Bowls combine ground turkey, fresh vegetables, and quinoa or rice for a wholesome weeknight meal.


Ingredients

  • 1 lb ground turkey
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the ground turkey until browned and cooked through. Season with salt and pepper to taste.
  2. In a large bowl, combine the cooked quinoa or rice, halved cherry tomatoes, diced cucumber, red onion, bell pepper, and chopped parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, oregano, salt, and pepper to create a dressing.
  4. Pour the dressing over the veggie mixture and toss to combine. Divide into bowls, top with cooked turkey, and sprinkle with feta cheese.

Notes
