Description

A quick, healthy, and flavorful Mediterranean chicken stir-fry with juicy chicken and vibrant vegetables.


Ingredients

  • 1 lb chicken breast, cubed
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the cubed chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the garlic and cook for another minute until fragrant. Toss in the bell pepper, zucchini, and cherry tomatoes, cooking until tender, about 3-4 minutes.
  4. Stir in the spinach and oregano, cooking until the spinach wilts. Season with salt and pepper. Serve over cooked rice or quinoa.

Notes

To prevent soggy vegetables, cook over high heat and don’t overcrowd the pan. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
