Description

Ingredients

  • 1 cup granulated sugar
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the granulated sugar, water, and a pinch of salt. Heat over medium heat, stirring occasionally until the sugar completely dissolves.
  2. In a large mixing bowl, beat the egg whites and cream of tartar using an electric mixer at medium speed until soft peaks form (about 2-3 minutes).
  3. Once the sugar syrup is ready and bubbling, slowly pour it into the bowl with the whipped egg whites while continuing to beat at high speed for about 5 minutes until you achieve stiff peaks.
  4. Mix in the vanilla extract until well combined and use immediately on cakes or cupcakes.

Notes

Best enjoyed fresh; if stored in the refrigerator, re-whip slightly before use. Ensure bowls and beaters are clean and free from oils for optimal whipping.
