- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place the chicken breasts in the crockpot. Make sure to arrange them evenly so they cook uniformly.
- In a separate bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, garlic powder, Italian seasoning, salt, and pepper until well combined.
- Pour the mixture over the chicken in the crockpot, making sure the chicken is well-coated. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Once done, garnish the dish with fresh basil before serving.
Notes
You can substitute heavy cream with half and half or coconut milk for a lighter option. Adjust seasoning to taste.
