Description

A delightful combination of savory grilled steak and sweet fresh peaches on a bed of mixed greens, perfect for summer.


Ingredients

  • 1 lb steak (flank or sirloin)
  • 2 peaches, sliced
  • 4 cups mixed greens (arugula, spinach, or lettuce)
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts or pecans, chopped
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Marinate the steak in olive oil, balsamic vinegar, salt, and pepper for at least 30 minutes.
  2. Preheat your grill over medium-high heat. Grill the steak to your desired doneness, about 4-5 minutes per side for medium-rare.
  3. While the steak rests, combine the mixed greens, peach slices, red onion, feta cheese, and chopped walnuts in a large bowl.
  4. Place the sliced steak on top of the salad and drizzle with additional olive oil and balsamic vinegar if desired. Toss gently to combine all ingredients and serve immediately.

Notes

Allow the steak to marinate for at least 30 minutes, but for best results, aim for 2-4 hours. Use fresh, ripe peaches for the best flavor.
