- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 packages (8 oz each) cream cheese, softened
- 1 cup pure maple syrup
- 4 large eggs

- 1/2 cup brown sugar
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of the prepared springform pan.
- Beat the softened cream cheese until smooth. Gradually add sugar, maple syrup, and vanilla extract, mixing until blended.
- Add eggs one at a time, mixing on low speed after each addition until just blended.
- Pour the cream cheese mixture over the crust in the springform pan.
- In a saucepan, combine chopped pecans and brown sugar, cooking until toasted and caramelized.
- Transfer the cheesecake to the oven and bake for 60-70 minutes, until the center is set.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours before serving.
Notes
For a deeper maple flavor, consider using maple extract alongside the syrup. Ensure cream cheese is at room temperature for smoother mixing.
