Description

A delightful side dish combining roasted carrots and crisp apples with maple syrup and Dijon mustard for a sweet and tangy flavor.


Ingredients

  • 4 carrots, peeled and cut into sticks
  • 2 apples, cored and cut into wedges
  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper until smooth and slightly sticky.
  3. Add the carrot sticks and apple wedges to the bowl and toss until well coated.
  4. Spread the coated vegetables onto a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through.
  5. Garnish with fresh thyme, if desired, and serve warm.

Notes
