Description

A delightful no-bake dessert combining the rich flavors of creamy cheesecake with the irresistible taste of Lotus Biscoff cookies, perfect for any occasion.


Ingredients

  • 250g Lotus Biscoff cookies
  • 100g butter, melted
  • 200g cream cheese
  • 100g powdered sugar
  • 200ml heavy cream
  • 1 teaspoon vanilla extract
  • Optional: extra Biscoff cookies for garnish

Instructions

  1. Crush the Lotus Biscoff cookies into fine crumbs and mix with the melted butter. Press the mixture into the bottom of the prepared cake pan to form a sturdy base.
  2. In a large mixing bowl, combine the cream cheese and powdered sugar until smooth and creamy.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture along with the vanilla extract.
  4. Pour the mixture over the cookie base and smooth the top with a spatula.
  5. Refrigerate for at least 4 hours or until set.
  6. Before serving, top with additional crushed Biscoff cookies if desired. Slice and enjoy!
