A warm and hearty lentil soup that’s comforting and packed with protein and fiber.
Ingredients

- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, sautéing for 5-7 minutes until softened.
- Stir in the minced garlic and cook for another minute, allowing the garlic to release its aromatic flavor.
- Add the rinsed lentils, vegetable broth, diced tomatoes, cumin, and thyme to the pot. Bring to a boil, then reduce the heat and simmer for 25-30 minutes or until the lentils are tender. Finally, season with salt and pepper to taste.
Notes
Serve hot, garnished with fresh herbs or olive oil. Pairs well with crusty bread or a green salad.
