Ingredients

- 1 block of seitan, sliced
- 1/4 cup flour (for dredging)
- 3 tablespoons olive oil
- 2 tablespoons capers
- 1 cup vegetable broth
- Juice and zest of 2 lemons
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Dredge the seitan slices in flour, shaking off the excess.
- Heat the olive oil in a skillet over medium heat.
- Add the seitan slices to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
- Remove the seitan from the skillet and set aside. In the same skillet, add capers, vegetable broth, lemon juice, and lemon zest, scraping up any browned bits.
- Return the seitan to the skillet, season with salt and pepper, and simmer for a few minutes until heated through and the sauce has thickened.
- Serve garnished with chopped parsley.
Notes
For a thicker sauce, allow it to simmer longer. Fresh lemons provide a brighter flavor. Store leftovers in an airtight container for up to 3 days.
