- 1 pound seitan, sliced
- 1/4 cup all-purpose flour
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup vegetable broth
- Juice of 2 lemons
- 1/4 cup capers, rinsed
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Dredge the sliced seitan in flour mixed with salt and pepper.
- Heat olive oil in a large skillet over medium heat.
- Add the seitan and cook until golden brown on both sides, about 5-7 minutes.
- Remove the seitan and set aside; sauté the minced garlic until fragrant, about 1 minute.
- Pour in the vegetable broth and lemon juice, then stir in the capers and return the seitan to the skillet.
- Cook for an additional 5 minutes, allowing flavors to meld. Garnish with fresh parsley before serving.
Notes
Serve over rice, quinoa, or with steamed vegetables. Leftovers can be stored in an airtight container for up to 3 days.
