- 2 cups almond flour
- 1 scoop protein powder (vanilla or unflavored)
- 1/4 cup sweetener (e.g., honey or maple syrup)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsweetened applesauce
- 1/2 cup almond milk
- 2 large eggs
- 1 tablespoon lemon zest
- 1/4 cup lemon juice
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the almond flour, protein powder, sweetener, baking powder, baking soda, and salt.
- In another bowl, whisk together the applesauce, almond milk, eggs, lemon zest, and lemon juice.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
Notes
For variation, use other berries or add chocolate chips. These muffins can also be made vegan.
