- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup fresh blueberries
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/2 teaspoon baking powder
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a medium bowl, mix together the flour, sugar, and salt. Stir in the melted butter until well combined. Press this mixture firmly into the bottom of the prepared baking dish to form a crust.
- In another bowl, whisk together the eggs, lemon juice, lemon zest, and baking powder until fluffy. Gently fold in the blueberries.
- Pour the lemon-blueberry mixture over the crust and spread it evenly. Bake for 25-30 minutes until set and slightly golden.
- Allow the bars to cool completely before slicing. Dust with powdered sugar if desired.
Notes
For best flavor, use fresh blueberries. Store in an airtight container in the refrigerator for up to one week.
