Description

Transform your leftover mashed potatoes into delightful cheese puffs that are savory and satisfying. Perfect for gatherings or a crispy afternoon treat.

Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, combine the leftover mashed potatoes, shredded cheese, breadcrumbs, green onions, egg, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small balls or patties that are about the size of a golf ball.
  3. Heat oil in a frying pan over medium heat. Carefully add the potato puffs to the hot oil and fry until golden brown, about 3-4 minutes on each side.
  4. Remove from oil and drain on paper towels. Serve warm for the best flavor and texture.

Notes

Serve with marinara sauce or sour cream for dipping. They can be made ahead, frozen, and fried straight from the freezer.
