Instructions
- Beat the cream cheese in a mixing bowl until smooth and creamy.
- Add the eggs, vanilla extract, and baking powder; beat until fully combined.
- Heat a non-stick skillet over medium heat and add coconut oil or butter.
- Pour small amounts of batter onto the skillet to form pancakes (about 3 inches in diameter).
- Cook for 2-3 minutes until small bubbles form on the surface.
- Flip the pancakes and cook for another 2-3 minutes until golden brown.
- Serve warm with low-carb syrup or fresh berries.
Notes
Use room temperature cream cheese for easier mixing. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
