Ingredients

  • 1/2 cup erythritol (or preferred sweetener)
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 34 tablespoons almond milk (as needed)
  • Sugar-free chocolate chips (optional, for coating or adding inside)

Instructions

  1. In a mixing bowl, combine almond flour, cocoa powder, erythritol, melted coconut oil, vanilla extract, and salt. Stir until fully mixed.
  2. Add almond milk, one tablespoon at a time, mixing until the dough holds together.
  3. Using your hands, scoop out small amounts of the mixture and form them into balls, about one inch in diameter.
  4. Place the formed truffles on a parchment-lined plate and chill them in the refrigerator for at least 30 minutes.

Notes

For a chunkier texture, leave some chocolate chips un-mixed. Store in an airtight container in the refrigerator for up to one week or freeze for up to one month.
