Ingredients

- 3–4 lbs beef roast
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and black pepper.
- Rub the garlic herb mixture all over the beef roast.
- Place the beef in a roasting pan and pour the beef broth around it. Roast for about 1.5 to 2 hours, or until the internal temperature reaches 135°F for medium-rare.
- Remove the roast from the oven and let it rest for 10-15 minutes before slicing and serving.
Notes
Allow the roast to rest before slicing for maximum juiciness. This dish pairs well with creamy mashed potatoes and roasted vegetables.
