Instructions
- Preheat the oven to 375°F (190°C).
- Whisk together the eggs and cottage cheese in a large mixing bowl.
- Stir in the cooked turkey bacon, diced jalapeños, shredded cheddar cheese, salt, and pepper.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture evenly into the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes, or until set and slightly golden.
