Description

Delicious cookies that blend the rich creaminess of ricotta with the sweet, nutty essence of almonds, boasting a soft, cake-like texture.

Ingredients

Scale
  • 2 cups ricotta cheese
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds for topping
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Gather all your ingredients and ensure that the butter is softened.
  2. Cream together ricotta cheese, granulated sugar, and softened butter until smooth. Beat in the eggs one at a time and stir in almond extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Fold the dry mixture into the ricotta mixture until just combined.
  4. Drop spoonfuls of dough onto ungreased baking sheets and sprinkle sliced almonds on top.
  5. Bake for 18–20 minutes or until golden brown. Allow to cool slightly on baking sheets before transferring to a wire rack and dust with powdered sugar before serving.

Notes

Ensure your ricotta cheese is well-drained for the best texture. Store in an airtight container at room temperature for up to five days.
