Delicious stuffed mushrooms filled with creamy feta, fresh spinach, and fragrant garlic, perfect as an appetizer or party snack.

- 12 large mushrooms
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup breadcrumbs
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes (optional)
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C). Remove stems from mushrooms and chop finely.
- In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushroom stems, and sauté for 2-3 minutes.
- Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and stir in feta, breadcrumbs, salt, pepper, and optional red pepper flakes.
- Spoon the mixture into mushroom caps, packing each one generously. Place on a baking sheet and bake for 20-25 minutes until tender and golden.
- Garnish with parsley before serving.
Notes
Best served warm. Store leftovers in an airtight container in the refrigerator for up to 3 days.
