- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish with non-stick spray or butter.
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the baking dish.
- Beat cream cheese until smooth, then mix in pumpkin puree, sugar, eggs, vanilla, pumpkin spice, cinnamon, nutmeg, and salt until fluffy.
- Pour the filling over the crust and bake for 25-30 minutes or until set. Let cool to room temperature, then refrigerate for at least 2 hours.
- Slice into squares and serve.
Notes
Serve with whipped cream or caramel sauce. Store in an airtight container in the fridge for 4-5 days or freeze for up to 3 months.
