- 1 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 2 cups vanilla ice cream
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, combine cocoa powder, flour, baking soda, and salt; whisk together.
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract into the creamed mixture.
- Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in chocolate chips.
- Drop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them apart. Bake for 10-12 minutes or until set. Cool on the baking sheet briefly before transferring to a wire rack.
- Once cooled, sandwich a scoop of vanilla ice cream between two cookies and press gently.
- Serve immediately and enjoy!
