- 1 1/2 cups chocolate graham crackers, crushed
- 1/2 cup unsalted butter, melted
- 1/2 cup sugar
- 1 cup heavy cream
- 8 oz bittersweet chocolate, chopped
- 2 tbsp espresso powder
- 4 large eggs
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- In a mixing bowl, combine graham crackers, melted butter, and sugar. Press this mixture into the bottom of the prepared baking pan to form a crust.
- Bake for about 10 minutes until set, then let cool slightly. Heat heavy cream in a saucepan until simmering, remove from heat, and stir in chocolate and espresso powder until smooth.
- In a separate bowl, beat the eggs with vanilla extract and salt. Gradually pour the chocolate mixture into the egg mixture while whisking constantly. Pour this filling over the cooled crust and bake for another 20-25 minutes until just set but slightly jiggly in the center.
- Let cool to room temperature, then refrigerate for at least 2 hours before cutting into squares.
Notes
For a more intense chocolate flavor, use high-quality chocolate. Allow the squares to chill completely for easier cutting.
