- 4 pounds beef short ribs
- 1 tablespoon salt
- 1 tablespoon black pepper
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- Fresh herbs (such as thyme or rosemary) for garnish
Instructions
- Season the short ribs generously with salt and pepper.
- Set the Instant Pot on sauté mode and add olive oil. Once hot, brown the short ribs on all sides, then remove and set aside.
- Add chopped onion and minced garlic to the pot. Sauté until softened and fragrant.
- Deglaze the pot by adding beef broth and, if desired, red wine. Scrape any browned bits from the bottom to enhance the flavor.
- Stir in Worcestershire sauce and brown sugar, mixing well to combine.
- Return the browned short ribs to the pot, making sure they are submerged in the liquid.
- Close the lid and cook on high pressure for 45 minutes.
- Allow the pressure to release naturally for 10 minutes, then switch to quick release for any remaining pressure.
- Serve the short ribs hot, garnished with fresh herbs for a beautiful finish.
Notes
Trim excess fat for a lighter dish. Let the meat rest before serving to allow juices to redistribute. Can be made ahead for enhanced flavors.
