Description

Succulent shrimp kissed with the fiery sweetness of hot honey come together with wholesome quinoa and vibrant veggies to create a filling yet exciting meal.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 cup quinoa
  • 2 tablespoons hot honey
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 cup corn (canned or frozen)
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water and then cook according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes.
  3. Drizzle hot honey over the shrimp and cook for an additional 1-2 minutes, stirring to coat well.
  4. In a large bowl, combine the cooked quinoa with the diced bell pepper, corn, and sliced green onions. Mix gently.
  5. Serve the hot honey glazed shrimp over the quinoa mixture and garnish with fresh cilantro.

Notes
