- 1 pound shrimp, peeled and deveined
- 1 cup quinoa
- 2 tablespoons hot honey
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 cup corn (canned or frozen)
- 2 green onions, sliced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water and then cook according to package instructions.
- In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes.
- Drizzle hot honey over the shrimp and cook for an additional 1-2 minutes, stirring to coat well.
- In a large bowl, combine the cooked quinoa with the diced bell pepper, corn, and sliced green onions. Mix gently.
- Serve the hot honey glazed shrimp over the quinoa mixture and garnish with fresh cilantro.
Notes
These bowls are perfect as a standalone meal, but can also be paired with a side salad or avocado slices.
