Ingredients
Scale
- 2 cans corn (drained)
- 1/2 cup honey
- 1/2 cup milk
- 1/4 cup butter (melted)
- 2 eggs
- 1 cup cornmeal
- 1 teaspoon baking powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the drained corn, honey, milk, melted butter, and eggs until well combined.
- In another bowl, combine the cornmeal, baking powder, salt, and pepper.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the mixture into a greased casserole dish and bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
Make sure to drain the corn well to avoid excess moisture. You can substitute honey with maple syrup for different flavor. Adding cheese before baking can create a melty layer.
