Ingredients

  • 2 cups rolled oats
  • 1 cup nuts (e.g., almonds, walnuts)
  • 1 cup honey or maple syrup
  • 1/2 cup peanut butter or almond butter
  • 1 cup dried fruits (e.g., raisins, cranberries)
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish (about 9×9 inches) with parchment paper.
  2. In a large bowl, combine the rolled oats, nuts, dried fruits, and salt. Stir to ensure even distribution.
  3. In a small saucepan over medium heat, combine honey (or maple syrup) and peanut butter. Stir until melted and smooth, then remove from heat and stir in the vanilla extract.
  4. Pour the honey mixture over the oat mixture and combine thoroughly. Press into the prepared baking dish and bake for 20-25 minutes or until golden brown. Allow to cool completely before cutting into bars.
