Delightful homemade bars combining coconut, almond, and chocolate for a healthier twist on the classic candy.


Ingredients

Scale
  • 1 cup sweetened shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Almonds (for topping)
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a bowl, mix the shredded coconut, almond butter, honey or maple syrup, vanilla extract, and salt until well combined.
  2. Press the coconut mixture into a lined baking dish, then place almonds on top.
  3. Refrigerate for about 30 minutes to let the mixture set and firm up.
  4. Melt the dark chocolate chips and coconut oil in a microwave-safe bowl or double boiler until smooth.
  5. Remove the mixture from the fridge and cut it into bars or squares.
  6. Dip each piece in the melted chocolate, allowing excess to drip off, and place on parchment paper to cool.
  7. Refrigerate again until the chocolate has hardened, about 15-20 minutes.
