Deliciously healthy zucchini boats filled with seasoned ground turkey, fresh tomatoes, and melted cheese. High in protein and easy to prepare.

- 4 medium zucchini
- 1 pound ground turkey
- 1 cup diced tomatoes
- 1/2 cup onion, chopped
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Wash your zucchinis and cut them in half lengthwise, then scoop out the seeds with a spoon to create boat shapes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
- Add the ground turkey to the skillet with the onions and cook until browned, about 5-7 minutes. Stir in the diced tomatoes, garlic powder, Italian seasoning, salt, and pepper. Let simmer for 2-3 minutes.
- Spoon the turkey mixture into the hollowed-out zucchini boats, top with cheese, and place on a baking sheet. Bake for 25-30 minutes, until the zucchini is tender and cheese is melted and bubbly.
Notes
Serve with fresh herbs and a side of salad or roasted vegetables. Great for meal prep and can be stored in the fridge for up to 3 days.
