- 1 lb extra-lean ground beef or ground turkey
- 1 small onion, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
- 1 can (15 oz) tomato sauce
- 1 packet (1 oz) taco seasoning
- 1 packet (1 oz) dry ranch dressing mix
- 1 cup beef or chicken broth
Instructions
- In a large skillet over medium-high heat, cook the ground meat and diced onion until the meat is no longer pink. Drain off any excess fat to keep the soup lean and healthy.
- Transfer the browned meat and onion mixture into your slow cooker. Add the black beans, pinto beans, corn, diced tomatoes, tomato sauce, taco seasoning, ranch mix, and broth.
- Stir everything together until the seasoning is well incorporated. Cover the crockpot with the lid and set it to cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
- Once the cooking time is complete, give the soup a final stir. Taste it and adjust the salt or pepper if needed before ladling the hot soup into bowls.
