  • 1 lb extra-lean ground beef or ground turkey
  • 1 small onion, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (15 oz) tomato sauce
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) dry ranch dressing mix
  • 1 cup beef or chicken broth

Instructions

  1. In a large skillet over medium-high heat, cook the ground meat and diced onion until the meat is no longer pink. Drain off any excess fat to keep the soup lean and healthy.
  2. Transfer the browned meat and onion mixture into your slow cooker. Add the black beans, pinto beans, corn, diced tomatoes, tomato sauce, taco seasoning, ranch mix, and broth.
  3. Stir everything together until the seasoning is well incorporated. Cover the crockpot with the lid and set it to cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
  4. Once the cooking time is complete, give the soup a final stir. Taste it and adjust the salt or pepper if needed before ladling the hot soup into bowls.
