Description

A delightful and nutritious dish packed with protein from eggs and feta, combined with vibrant spinach and tomatoes.


Ingredients

  • 4 eggs
  • 1 cup spinach
  • 1 cup diced tomatoes
  • 1/2 cup crumbled feta cheese
  • 1 onion
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in the minced garlic, cumin, and paprika; cook for another minute until fragrant.
  4. Add the diced tomatoes and cook until thickened, about 5 minutes; then stir in spinach until wilted.
  5. Make four wells in the mixture and crack an egg into each well; sprinkle with feta and season with salt and pepper.
  6. Cover the skillet and cook until eggs are done to your liking.
