Description
A delicious and nutritious bread made primarily from quinoa, packed with protein and fiber. Perfect for toast, sandwiches, or enjoyed on its own.

- 1 cup quinoa
- 2 cups water
- 1/4 cup almond flour
- 1/4 cup flaxseed meal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons honey or maple syrup
- 3 large eggs
Instructions
- Rinse the quinoa under cold water and drain. In a pot, combine rinsed quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until the water is absorbed.
- Preheat the oven to 350°F (175°C) and grease a loaf pan. In a large bowl, mix cooked quinoa, almond flour, flaxseed meal, baking powder, salt, olive oil, honey or maple syrup, and eggs. Stir until the mixture is well combined.
- Pour the mixture into the prepared loaf pan and smooth the top. Bake for 30-35 minutes or until the bread is golden brown and a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack. Let it cool completely before slicing.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Rinse quinoa to remove bitterness.
