Instructions
- Preheat the oven to 375°F (190°C).
- Whisk together eggs, milk, salt, and pepper until smooth.
- Heat olive oil in a skillet over medium heat, then sauté garlic scapes for 3-4 minutes.
- Stir in fresh herbs and pour egg mixture into the skillet; cook for 2-3 minutes, pushing edges toward center.
- Sprinkle feta over the top and transfer skillet to the oven; bake for 15-20 minutes until set and golden.
